Around this time of year, when I ran my bakery I would bake up batches of pumpkin cookies. I tried various recipes throughout the years, but the one that was most adaptable was this one. With or without frosting, with or without nuts…these cookies make your house smell wonderful and invite you back to autumn. (Whenever the weather decides to make up its mind!)
1 cup butter, softened
2/3 cup firmly packed brown sugar
1/3 cup sugar
1 cup mashed cooked pumpkin
1 large egg
1 teaspoon of vanilla or lemon extract
2 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice pie or ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped walnuts
2 cups powdered sugar
1/4 cup butter, softened
3 ounces cream cheese, softened
1 teaspoon vanilla or lemon extract
1/4 teaspoon pumpkin pie spice or ground cinnamon
Walnut pieces, if desired
